At around 18:50 you mention that the fructose in honey and in quicker crystallation. This is incorrect. It’s glucose that crystallizes faster than fructose. Usually fall honeys with aster flowers like goldenrod and sunflower will rapidly. Most my sping honeys contain larger amounts of fructose. You should get and read the book ”A Comprehensive Survey of Honey” by Eva Crane. 1976. I wish this book was updated. This book is 500+ pages. 1/3 of the book is science refrence. Great show!
